Ariel and Constanza Rodr\u00edguez started baking premium alfajores in their home kitchen in Mendoza in 2008. Seventeen years later, they produce 12 million a year, run two factories at the foot of the Andes, and are the first Argentine alfajor brand you will find onboard as part of the Altura network. We sat down with them to hear the story.<\/em><\/p>\n

 <\/p>\n

Take us back to 2008. Why alfajores, and what does Entre Dos mean?<\/strong><\/p>\n

We had always loved this sweet treat, and we could see it was a product we could start making from home and grow little by little.<\/p>\n

At that time, we had three very young daughters, our oldest was only three years old and the twins were one. We wanted to start a business, but we also needed something that would let us work while still being present in their upbringing. That is how we started, with four dozen alfajores in the oven at home, without imagining everything that would come later.<\/p>\n

The name Entre Dos has a double meaning for us. On one hand, because it is a project that was born between Ariel and me, as a couple and as partners. And on the other, because the very definition of an alfajor refers to a filling that is “between two cookies.” From the beginning, the name represented both our story and our product.<\/p>\n

 <\/p>\n

More than half the weight of an Entre Dos alfajor is in the filling. Why did you decide that this should be your standard?<\/strong><\/p>\n

From day one, we were very clear that our guiding principle was quality.<\/p>\n

For us, quality means taking care of every detail: excellent raw materials, a good recipe, respect for the processes, and a flavour experience that reflects what we want to represent as a brand. That is why the filling plays such an important role. We did not want it to be simply an alfajor with filling. We wanted consumers to truly enjoy it.<\/p>\n

In your two factories, you combine manual production with modern techniques. What is still done by hand?<\/strong><\/p>\n

Today we have more than 18 varieties, and each one has different characteristics and processes. In many cases, artisanal production is still essential because there are products that, due to their format, fillings or finishes, simply cannot be replaced by a machine without losing part of their identity.<\/p>\n

For us, incorporating technology does not mean ceasing to be artisanal. It means using technology where it allows us to be more efficient and maintain consistency, while preserving handmade work where it truly adds value to the product.<\/p>\n

The Black Edition DOBLE won best chocolate alfajor in the country in 2024. What makes it different?<\/strong><\/p>\n

The Black Edition DOBLE has had a very special response from consumers since it launched. Part of its appeal is the combination of elements: a black cookie, excellent dulce de leche, and a double coating that combines white chocolate and dark chocolate. It is intense, balanced, and very tempting, especially for chocolate lovers.<\/p>\n

But behind a different proposal, the same concept as always remains: to seek the best possible quality in each of its components.<\/p>\n

From four dozen alfajores in your home oven to 12 million alfajores a year. Looking back, which decision had the greatest impact on your journey?<\/strong><\/p>\n

There have been many decisions that brought us to where we are today, some small and others truly decisive. But if we had to choose one, it would probably be one of the riskiest: selling our house to build our first factory.<\/p>\n

It was a very difficult and very emotional decision, because it meant betting everything on a project we truly believed in. That factory let us stop thinking in dozens and start thinking on a different scale.<\/p>\n

 <\/p>\n

Looking back today, that first factory also has a very special meaning. It was where our chocolate line and gluten-free products were born, many of which have gone on to win awards across the country.<\/p>\n

What did you find interesting about the onboard sales channel, and why did you choose to work with Altura?<\/strong><\/p>\n

We found it very attractive that people from different parts of the world could discover a product we make in Mendoza.<\/p>\n

The onboard channel has something very special. Passengers are often discovering a destination, a culture, or a new product. An alfajor can be a way of bringing a small piece of our identity to other places.<\/p>\n

We chose to work with Altura because we found a company with prestige and, above all, with a philosophy that felt very aligned with ours: the pursuit of quality in everything we do.<\/p>\n

 <\/p>\n

For a passenger flying in Chile or Peru who has never tried an alfajor, what should they notice in the first bite?<\/strong><\/p>\n

The first thing we want is for them to discover something new and want to have another one.<\/p>\n

If we had to say what they should find in that first bite, it would be a combination of textures and flavours: the smoothness of the dulce de leche, the contrast with the cookies, and, depending on the variety, the chocolate and its different intensities.<\/p>\n

And there is something else we would like them to perceive: that they are not simply eating a sweet treat. They are trying a product that was born in Mendoza, with a family story behind it, and that was made with great care in every detail. Hopefully, after the first bite, the question will be: where can I get another one?<\/p>\n

Your philosophy places quality above profitability. What does that mean in practice at your current scale, and where does it lead you over the next three years?<\/strong><\/p>\n

Putting quality above profitability does not mean neglecting the business. It means understanding that profitability is the result of building a strong and reliable brand over time.<\/p>\n

In practice, it means we often make decisions that may be more costly, but that we believe are the right ones to maintain the product we want to offer. Not lowering the quality of a raw material to improve a margin. Not rushing a process if it affects the result. Not launching a product simply because it could be profitable if we do not feel it represents Entre Dos.<\/p>\n

Over the next three years, we want to continue growing, especially in international markets, without losing our essence. We want Entre Dos to become increasingly recognised outside Argentina, bringing a product born in Mendoza to new consumers while maintaining what brought us here: quality, innovation, work, and passion for doing things well.<\/p>\n
